Beetroot mezhukkupuratti (Beetroot stir fry)

Beetroot was the most favourite vegetable during my childhood days. May me its charming red colour would have attracted me the most. My amma always used to say, when I was a child, I used to eat rice in the dish in which the beetroot was cooked, so that the rice would get its red color. I also do the same to attract my child from eating colorful rice. So today I am giving you a very simple dish with beetroot. Let's start....






Ingredients

* One meidum sized beetroot.

* Two green chillies.

* Two tablespoon of oil.

* 1/2 cup of water.

* Salt as you need.

* Four numbers of shallots


Lets start......

* Peel off the skin of the beetroot and cut it into pieces.

* Wash it and clean it.

* Cook it in the pressure cooker with salt and green chilli and water.

* When it is cooked, place  a frying pan on the stove.

* Add oil into the pan.

* Saute the onion in the oil.

* When it is half done, add the already cooked beetroot into it and saute for five more minutes.

* Turn off the flame and serve it as a side dish for rice..........
