Kerala Style Vattayappam (Steamed Rice Cake)

It is a traditional tea time snacks most popular among the Scyrian Catholics of kerala.Vattayppam is actually the fermented steamed rice cakes made with the same recipe of that of Vellayappam. The only difference is that is sugar is added to Vattayappam. So  lets see how to make the sweet soft and spongy vattayappam.








Now let's start the preparation.

Ingredients

* 2 cups of raw rice

* 1/2 cup of cooked rice

* 1/4 teaspoon of yeast

* 1 cup of grated coconut

* 1/4 teaspoon of cardamom powder

 * 1 tablespoon of ghee

* 10 nos of cherry fruit for garnishing

* 2 tablespoons of sugar

* 1 cup of water

* A pinch of salt



Start the process........
*Soak the raw rice in water for about two hours.

*Grind it into a smooth paste with water, sugar, grated coconut, cooked rice, yeast, salt, water and  cardamom powder.

*Allow it to ferment for 2-4 hours.

*Grease a round plate with ghee.

*Then pour the fermented dough into the plate.

*Cook it in a steamer for about 20 to 30 minutes.

*When it is cooked, allow it to cool completely.

*Dont cover it otherwise the steam will get condensed and the vattayappam will get watery.

*Cool it uncovered.

*When it is cooled completely, cut it into desired shapes and garnish it and serve it with a cup of  tea.............
