Padavalanga Thoran ( Snake Gourd Stir fry)



A simple and easy recipe for the lunch which can be made within minutes. A quick and healthy recipe whcih can fill the tiffin boxes as a vegetable curry ... Padavalanga or snake gourd is a vegetable which is most common in a malayalis dining table....


Ingredients

*  Snake gourd - 250 grams

*  Coconut oil-2 tablespoon

*  Cumin seeds -1 pinch

*  Green chilli - 4 nos. (2 green and 2 ripe)

*  Water-100 ml

*  Curry leaves -2 sprigs

*  Grated coconut -1/2cup

*  Turmeric powder -2 pinch

*  Salt - as you need.

Directions

*  Grind the  cumin seeds, turmeric powder, grated coconut,  and curry leaves, roughly in a food processor and keep it aside.

*  Gentle remove the white coating of snake gourd

*  Clean and make the snake gourd into small pieces.

*  Cook the snake gourd, salt and water along with grated coconut.

*  Cook it covered for about five to seven minutes.

*  Reduce the flame to sim.

*  Remove the lid.

*  Evaporate the water, if any, in the snake gourd.

*  Sprinkle some coconut oil on the top of the thoran.

*  Remove it from the stove.

*  Cover the dish for about 2 more minutes.

*  Gently mix it with a spatula, so that the coconut oil will get mixed up with the curry.
